The rare red pepper from the Vietnamese island of Phu Quoc ripens directly on the plant until fully ripe. This gives it a significantly fruitier taste, a softer spiciness and rich spicy tones with a hint of dried fruit. After traditional drying in the sun, it darkens to black with a subtle reddish hue.

The spice comes from a small family farm, where the entire process of growing, harvesting and drying is done by hand. The farm produces only a limited amount of fully ripe pepper per year, which makes it an exceptional and rare ingredient. Phu Quoc is one of the most famous areas for growing premium spices in Vietnam. Thanks to the tropical climate and late harvest, the spice has a unique taste profile that will be appreciated especially by lovers of quality gastronomy. Exotic tonka beans from the Venezuelan rainforests are among the most distinctive and popular ingredients in modern gastronomy. Its intense aroma is reminiscent of a combination of vanilla, almonds, caramel and sandalwood, giving dishes an unmistakable character.

Tonka beans grow on massive trees in the tropical climate of Venezuela. After harvesting, the fruits are dried, then macerated in rum and dried again, giving them their typical aroma and rich aromatic profile. The result is a spice with a deep sweet-spicy taste and a slightly bitter finish. It stands out best freshly grated on a fine grater, similar to nutmeg. A really small amount is enough, because its aroma is extremely intense.
