A Swiss-Ghanaian company recently found a solution to the problem of preventing the waste of the particularly delicious, moist pulp surrounding the kernel of the cocoa fruit due to its high water content and tropical conditions. They set up mobile industrial units powered by solar energy on the farms, which immediately after harvesting the cocoa crop squeeze the juice from the pulp and deliver it to the pasteurization plant within three hours. In this way, all those special aromas and valuable substances (e.g. vitamins) that are hidden in the flesh of the fruit are preserved. The fact that this move was able to provide the plantation workers with an additional source of income and produce food from something that was previously thrown away is of great value. In addition, the juice from the cocoa pulp has a very special aromatic profile: naturally sweet, it contains three types of sugar, but it also carries a sour taste. Its taste is not chocolate at all, rather it has strongly sour, fruity notes, with aromas reminiscent of lychee, passionfruit, currants and dried fruits mixed together, while the sweetness resembles honey.
