After this process, the coffee is fermented to bring out its characteristic properties. Twenty-four hours later, the coffee beans are washed with water to remove all impurities. This crucial step distinguishes authentic Colombian coffee from Brazilian coffee. After washing, the coffee beans are left in the sun until they are completely dry and have the ideal moisture ratio.
