The rare red pepper from the Vietnamese island of Phu Quoc ripens directly on the plant until fully ripe. This gives it a significantly fruitier taste, a softer spiciness and rich spicy tones with a hint of dried fruit. After traditional drying in the sun, it darkens to black with a subtle reddish hue.

The spice comes from a small family farm, where the entire process of growing, harvesting and drying is done by hand. The farm produces only a limited amount of fully ripe pepper per year, which makes it an exceptional and rare ingredient. Phu Quoc is one of the most famous areas for growing premium spices in Vietnam.
